Mexican flavors are some of my family’s favorites! So I know when I make my sheet pan veggie fajita dinner, everyone will be happy about what we’re having for dinner that night. It makes me happy too because I know how quick and easy this dinner is to prepare. One sheet pan to wash and that’s it? I’ll take more of those kinds of meal preps please!
Herbamare® Original is made from sea salt and 12 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.
1. Preheat oven at 425°F
2. On a sheet pan, place all veggies in seperate rows or mix altogether, it doesn't matter. If you know some prefer certain veggies more than others, you can keep them separated into rows, but all on the same sheet pan.
3. Drizzle olive oil over the veggies.
4. Add all spices into a small bowl and then sprinkle over everything. Mix the veggies to coat them with oil and spices.
5. Place in the oven for 25-30 min, mixing half way to make sure everything cooks evenly.
6. Serve with warm tortillas and guacamole!
