Sweet potato and wild rice salad

The perfect fall salad, highly nutritious made with ingredients rich in fiber and protein. You’ll want to make this in advance and pack it for lunch.

Ingredients

Sweet potato and wild rice salad

  • 4 sweet potatoes, diced
  • 1 ½ cup wild rice
  • Herbamare® Original
  • 1 green onion, chopped
  • 1 apple, diced
  • ½ cup pecans, chopped
  • ⅓ cup pumpkin seeds
  • 1 cube of vegetable broth
  • 2 ½ cups water
  • Paprika
  • Drizzle of avocado oil

Ingredients (dressing)

  • ¼ cup olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ tablespoon maple syrup
  • Herbamare to taste
  • Black pepper to taste
  • 1 shallot, minced

Herbamare® Original

Herbamare® Original is made from sea salt and 12 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.

How to make sweet potato and wild rice salad

1. To prep the wild rice, add it to a heat proof bowl the day before and cover it with boiling water. This will help make it more tender and quicker to cook.

2. The next day, rinse the rice, add it to a casserole with 2 ½ cups of water. Adda cube of vegetable broth and mix until it boils. Once it boils, reduce to a simmer covered for 20 min. Once it is ready, fluff with a fork and remove excess liquid if needed.

3. For the sweet potato, add it to a big mixing bowl with a drizzle of avocado oil, Herbamare original sea salt and paprika to taste.

4. Add the cubes to an air fryer bin and cook at 400°F for 24 minutes.

5. In a small mason jar, add oil, dijon, maple syrup, apple cider vinegar, Herbamare and black pepper, shallot. Close the lid and shake well. 

6. Assemble the salad by mixing all the ingredients and adding the dressing. Serve and enjoy!
