I've been vegan for almost 12 years. You would think that a simple pancake recipe would be one of the first things to successfully "go vegan". But for me, to recreate the taste and texture of the Sunday pancakes my father made growing up, it took me several years. I recently concocted my winning recipe for vegan pancakes that leaves no one indifferent-especially my children who enjoy them with happy eyes and ask for more. I suggest you double this recipe in advance. The toppings in these pancakes make this recipe very filling; it goes down well on school mornings!

Ingredients

  • 2 ⅓ cup oat milk
  • 1 ½ cups organic all-purpose flour
  • ⅓ cup melted coconut oil
  • 3 tbsp maple syrup
  • ⅗ tsp. non-aluminum baking powder
  • ½ tsp. salt

How to make The best vegan pancakes

1. Place all ingredients in a blender until smooth.

2. Refrigerate for a minimum of 30 minutes up to 1 day to thicken the mixture and for best results. Note that chilling the mixture is really key.

3. In a coconut oil greased pancake pan over medium-low heat, pour ¼ cup of the mixture, rotating the handle to spread the mixture throughout. Cook until the edge of the pancake turns golden, about 1-2 minutes.

4. Turn the crepe with a spatula and cook for another minute.

5. On each pancake, make a slit from the center down. Next, spread Natur's cocoa peanut butter on the first quarter of the pancake. Next, spread thinly sliced banana pieces on top. On the third quarter of the pancake, add Natur almond butter and finally on the last part, spread strawberry jam and fresh strawberry slices. Simply fold the first quarter of the crepe and so on until the crepe is all folded and forms a triangle.
