1. Preheat the oven at 400 degrees.

3. While the potatoes are cooking, finely chop the fresh herbs to make the chimichurri sauce. Add all the other ingredients into a bowl and mix well to combine. Set aside.
4. Once the potatoes are cooked to your liking, served with the chimichurri sauce on top or in a bowl as a dip.
