High Protein Vegan Poke Bowl

One of my all-time favorite meals is vegan poke bowl. Made with any colorful veggies in my fridge, this high protein poke bowl is bursting with flavor! A healthy plant based dinner recipe to easily incorporate your daily serving of vegetables.

Ingredients

High Protein Vegan Poke Bowl

  • 1 cup white basmati rice
  • 1 cup quinoa
  • 1 cube of Herbamare vegetable broth
  • 2 tbsp avocado oil
  • 1 block of smoked tofu
  • Herbamare Spicy, to taste
  • 1 cup cooked edamame
  • 1 cup shredded red cabbage
  • 1 carrot, sliced thinly
  • 2 green onions, chopped
  • 1 cucumber, diced in small pieces

Sauce

  • ¼ cup tahini
  • 1 tbsp dark miso
  • 2 tbsp maple syrup
  • ½ cup water
  • Juice of ½ lemon
  • 1 small piece of raw ginger

Herbamare® Spicy

Herbamare® Spicy is made from sea salt and 15 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.

How to make High Protein Vegan Poke Bowl

1. Rinse rice and quinoa.

2. In a cooking pan, over medium heat, add a tbsp of oil, then the rice and quinoa. Mix well. Add the Herbamare cube and 2 cups of water.

3. Mix occasionally until it starts boiling. Once it does, reduce to simmer and cover with lid for 17 minutes.

4. While the rice and quinoa are cooking, prep veggies.

5. Cut tofu into cubes and cook in a pan over medium heat in a tbsp of avocado oil. Season with Herbamare sea salt.

6. For the sauce, add all ingredients to a blender until smooth and creamy.

7. Assemble the bowl with rice and quinoa on the bottom, then layer the veggies and tofu. Finish by adding the sauce and enjoy!
