Vegan Spinach Puffs

The perfect appetizer for the holidays that packs a punch of flavour and is super nutritious too!

Ingredients

Vegan Spinach Puffs

  • Phyllo or puff pastry
  • 1 ½ cups of soaked cashews (drained of their water)
  • 1 ½ cup of frozen spinach, thawed and drained
  • 2 cloves of garlic
  • 1 small white onion, chopped
  • Juice of one lemon
  • ½ cup of vegan cheese of choice
  • 1 tsp of Herbamare® Original
  • 1 tbs of dried dill
  • ½ cup of unsweetened almond milk
  • ½ cup of nutritional yeast flakes

Herbamare® Original

Herbamare® Original is made from sea salt and 12 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.

How to make Vegan Spinach Puffs

1. In a blender or food processor, add cashews, spinach, garlic, chopped onion, juice of one lemon, vegan cheese, Herbamare Original, dried dill, unsweetened almond milk and nutritional yeast flakes. Once it is all processed together, set aside.

2. Prep your phyllo or puff pastry sheet by cutting it into squares. Add a few layers of phyllo into a muffin pan. If you're using puff pastry, just add one layer.

3. Then simply drop into the middle of each muffin hole a small amount of the spinach mixture. Pinch the edges of the dough to lightly close the top. It doesn't have to be done perfectly, they are going to turn out nice no matter how you fold the tops!.

4. Then it's time to bake them in the oven at 350°F for about 15-20 min.
