Vegan Cobb Salad

The perfect light and fresh salad for warm days that are around the corner! The crispy smoked coconut brings the flavors up a notch and the crispness adds a fun texture. A staple in my house and a great salad to bring to a picnic or potluck! Make the ranch dressing in advance and keep it refrigerated for up to 5 days.

Ingredients

Vegan Cobb Salad

  • 1 Head of romaine lettuce, chopped.
  • Half a head of iceberg lettuce, chopped.
  • ½ cup pickled radishes
  • ¾ cup corn
  • 1 avocado, diced 
  • 1 cup cherry tomatoes, sliced in two.
  • ¾ cup crispy smoked coconut
  • ¾ cup cooked chickpeas
  • ⅓ cup red onion, finely chopped

How to make Vegan Cobb Salad

1. In a large bowl, add the lettuce and then spread out every other ingredient clockwise on top.

2. Add all ingredients to a high speed blender. Mix until creamy and smooth. Serve over salad and mix with tongs. Enjoy!
