Tomato & Corn Gazpacho

This Gazpacho is a fresh option for hot Summer days when you're in the mood for something light.

Ingredients

Tomato & Corn Gazpacho

  • 3 ears of corn, removed from the cob (you can save a few kernels for garnish)
  • 6 tomatoes
  • 2 yellow bell peppers, seeded and chopped
  • 1 garlic clove
  • 1/4 small white onion, chopped
  • Pinch cayenne
  • 2 tsp Herbamare® Original seasoning salt
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1/4 freshly squeezed lemon
  • Avocado slices (for garnish)
  • Alfalfa Sprouts (for garnish)

Full of healthy benefits, tomatoes are good for the heart, hair, skin and eyes. They are also immune boosting due to their high antioxidant properties and include vitamin C and beta carotene.

How to make Tomato & Corn Gazpacho

1. Place all ingredients (except the ingredients for garnish) in a high-speed blender. Blend until smooth.

2. Taste and adjust Herbamare & cayenne as desired. Let chill for 30 minutes.

3. Serve cold and garnish with alfalfa sprouts, corn kernels and avocado slices.

4. Enjoy!
