This Gazpacho is a fresh option for hot Summer days when you're in the mood for something light.
Full of healthy benefits, tomatoes are good for the heart, hair, skin and eyes. They are also immune boosting due to their high antioxidant properties and include vitamin C and beta carotene.
1. Place all ingredients (except the ingredients for garnish) in a high-speed blender. Blend until smooth.
2. Taste and adjust Herbamare & cayenne as desired. Let chill for 30 minutes.
3. Serve cold and garnish with alfalfa sprouts, corn kernels and avocado slices.
4. Enjoy!
