Did you know that avocados contain more potassium than bananas? An essential nutrient for the nervous system, low levels of potassium can cause stress & anxiety.
Sweet potatoes are a great source of Vitamin A (in the form of beta-carotene), B6, C and D, just to name a few.
1. Preheat your oven to 400 °F. Peel and dice your sweet potato into 1 inch cubes. Toss in a bowl with olive oil and Herbamare Original®. Line baking sheet with parchment paper. Place sweet potatoes on baking sheet. Let cook for 30-45 minutes or until they start to brown. Remove from the oven and set aside.
2. Place shell tacos on a plate. Spread 1.5 tbsp of refried beans on each. Add sweet potatoes, smashed avocado and alfalfa sprouts. Drizzle with lime. Feel free to add salsa or spicy sauce to add a little heat.
3. Enjoy!
