Ingredients

Pesto potato salad

  • 4 cups of small potatoes, chopped into halves
  • 2 tbs olive oil
  • 2 tsp Herbamare® Original
  • 2 tsp garlic powder
  • 3 tbs hemp seeds
  • 2 green onions, chopped
  • ¼ cup vegan parmesan
  • Fresh basil to top

Dressing

  • ½ cup vegan mayo
  • 1 tbs white wine vinegar
  • 2 tbs green pesto
  • Herbamare to taste

Herbamare® Original

Herbamare® Original is made from sea salt and 12 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.

How to make Pesto potato salad

1. In a bowl, mix potatoes, oil, garlic powder and Herbamare herbed sea salt. Cook in the oven or bbq or even air fryer. I suggest 25 min at 400°F in the oven and air fryer.

2. In a large salad bowl, add vegan mayo, vinegar, pesto and Herbamare herbed sea salt. Using a whisk, mix all those ingredients until it becomes creamy. Then add the cooked potatoes to the bowl.

3. Finally, add hemp seeds, onions, vegan parmesan and fresh basil and mix. Serve and enjoy!
