Mango and edamame salad

The easy, colourful salad you can whip up in a few minutes, bring to a summer potluck or serve as a side during your next bbq of the season!

Ingredients

Mango and edamame salad

  • 2 cups shelled edamame (can be frozen, make sure to simply let them unthaw and rinse them under room temp water to quicken the process)
  • 2 cups corn (same as edamame)
  • 2 fresh mangoes, cut into cubes
  • 1 can of black beans, rinsed and drained
  • ½ red onion, chopped
  • Juice of 1 lemon
  • 2 tsp Herbamare® Original
  • ¼-½ cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 1 tsp Dried organic basil

How to make Mango and edamame salad

1. In a big salad bowl, simply mix all of these ingredients together! The perfect hearty yet fresh summer salad.

This recipe makes a big bowl. Perfect for a bigger dinner party or if you want extra in the fridge for the next week. It will keep good for about 5 days.
