Ingredients

For the puff pastries

  • 1 sheet of frozen square puff pastry (half of a 400 g package), thawed

For the lobster salad

  • 225 g (1/2 lb) lobster meat, diced
  • 30 ml (2 tbsp) mayonnaise
  • 30 ml (2 tbsp) chopped celery
  • 2.5 ml (1/2 tsp) Herbamare organic spiced herb sea salt
  • 30 ml (2 tbsp) fresh chives, chopped
  • 15 ml (1 tbsp) 40% fat crème fraîche
  • 10 ml (2 tsp) fresh dill, chopped
  • 10 ml (2 tsp) lemon zest
  • 1.25 ml (1/4 tsp) paprika

How to make Lobster Puff Pastries

1. Preheat the oven to 190°C (375°F).

2. Prick the puff pastry sheet in several places using a fork.

3. Using a 7.5 cm (3-inch) round cookie cutter, cut out 12 circles from the puff pastry.

4. Grease the wells of a muffin tin. Place the pastry circles into the wells and shape them into cups. Fill the cups with dry beans to weigh them down. Bake for 16 to 18 minutes.

5. Remove from the oven and let cool slightly. Take out the dry beans from the pastry cups.

6. In a bowl, mix together the lobster salad ingredients.

7. Fill the pastry cups with the lobster salad.

8. Serve immediately and enjoy these delightful appetizers!
