This healthy salad made with lentils and different vegetables is perfect to make ahead for lunch for the week as the flavors only get better overnight.
Did you know that a red bell pepper contains nearly three times more vitamin C than an orange! So eat them up if you want to build your body’s defence against colds & flu. The dietary fibre in lentils also helps the digestive system, preventing constipation & IBS.
1. In a medium saucepan combine lentils and bay leaf. Cook lentils according to package instructions.
2. Drain lentils and discard bay leaf.
3. Place in a large work bowl with carrots, celery, red pepper, red onion, parsley, garlic, lemon juice, olive oil, Herbamare Original® and pepper.
4. Toss to combine and serve chilled or room temperature.
Makes 4 1/2 cups.
