Rich in vitamin A, courgettes can help improve your eyesight, help keep your skin healthy and due to their vitamin C content can also help to fight off infections such as colds & flu by boosting your immune system.
1. Add the courgettes, shallots, basil, thyme and marjoram to the vegetable stock, and simmer until the courgettes are tender. Remove pot from the heat. Season with Herbamare® Original seasoning salt.
2. In a separate pan, warm the milk but do not let it boil. Pour the milk into the vegetables, stir and garnish with cheese and parsley.
