Here's a grilled vegetable mix that can be used on pasta, as a side dish for poultry or even rolled up in a tortilla! Versatile and easy to make, this recipe is perfect for weekly meals!
Herbamare® Original is made from sea salt and 12 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.
1. Slice eggplant and zucchini in 2cm thick slices. Cut bell pepper in 4, remove seeds.
2.In a large mixing bowl, toss the vegetables
with olive oil, Herbamare®, black pepper,
oregano and garlic.
3. Grill vegetables on BBQ on medium-high heat until they get nice grill marks on them, about 4-5 minutes per side.
4. Cut grilled vegetables in bite size pieces and add balsamic vinegar. Stir to combine.
5.Sprinkle with basil and feta.
6.Serve on pasta, in a sandwich or wrap.
