Ingredients

Eggs and Avocado Toast

  • 2 slices of sourdough bread
  • Herbamare® Original to taste
  • 1 ripe avocado
  • Olive oil (for toasting)
  • 2 eggs
  • 2 tablespoons of crumbled feta cheese
  • Chili flakes (to taste)
  • Fresh chives, chopped, for garnish

How to make Eggs and Avocado Toast

1. Prepare the Avocado Spread: Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until it reaches your desired consistency. Season with Herbamare to taste.

2. Toast the Sourdough Bread: Heat a pan over medium heat and add a drizzle of olive oil. Place the sourdough bread slices in the pan and toast them until they are golden brown on both sides. Remove from the pan and set aside.

3. Cook the Eggs: In the same pan, add a bit more olive oil if needed. Crack the eggs into the pan and cook them to your liking (fried, scrambled, or poached). Season the eggs with Herbamare, pepper, and a sprinkle of chili flakes for a bit of heat.

4. Assemble the Avocado Toast: Take the toasted sourdough slices and spread a generous layer of the mashed avocado on each slice.

5. Add the Eggs and Feta: Place the cooked eggs on top of the avocado spread. Sprinkle crumbled feta cheese over the eggs.

6. Garnish and Serve: Finish by sprinkling fresh chopped chives on top for a burst of flavor and color.
