Sweet potato wraps

A nutritious, flavor-packed veggie lunch featuring sweet potato. Can be prepared ahead of time and fits nicely in a lunch box!

Ingredients

Sweet potato ingredients

  • 2 sweet potatoes, sliced into rounds
  • 1 tsp. Herbamare® Original
  • 1-2 tbsp. olive oil
  • 1 ½ tsp. Mexican spices
  • Mix everything together in a bowl, spread on a baking sheet and bake at

Ingredients for pickled onions:

  • 1 red onion, sliced into thin rings
  • ½ cup apple cider vinegar
  • 1 tsp. Herbamare
  • 1 tsp. cane sugar
  • Put all ingredients in a masson jar, keeps in the fridge for a week.

How to make Sweet potato wraps

To assemble the wraps, you'll need:

● 1 tortilla
● 2 tbsp. red bell pepper hummus
● A few slices of roasted sweet potato 
● A few slices of pickled onion
● Half an avocado, sliced
● 2 tbsp. cooked corn
● Lime juice
● Salsa to taste 
● Fresh cilantro 

Simply spread all ingredients in the center of the tortilla and roll!
