Ingredients

For the tacos

  • 12 small tortillas
  • 1 avocado, sliced
  • 60 ml (1/4 cup) sour cream (14%)

For the crispy cauliflower

  • 125 ml (1/2 cup) all-purpose flour
  • 5 ml (1 tsp) Herbamare Original spicy herbal sea salt
  • 2 eggs
  • 160 ml (2/3 cup) panko breadcrumbs
  • 160 ml (2/3 cup) plain breadcrumbs
  • 15 ml (1 tbsp) paprika
  • 1 cauliflower, cut into small florets
  • 80 ml (1/3 cup) Buffalo wing sauce (such as Frank’s RedHot)

For the coleslaw

  • 1/2 bag (340 g) coleslaw mix
  • 80 ml (1/3 cup) ranch dressing

How to make Crispy Buffalo Cauliflower Tacos

1. Preheat the oven to 220°C (425°F).

2. Prepare three shallow dishes. In the first, place the flour. In the second, beat the eggs with a bit of water. In the third, mix the breadcrumbs with the paprika and spicy sea salt.

3. Dredge the cauliflower florets in the flour, then dip them in the beaten eggs, and coat them with the breadcrumb mixture. Place on a baking sheet lined with parchment paper.

4. Bake in the oven for 22 to 25 minutes, stirring a few times during cooking. Remove from the oven.

5. In a large bowl, pour the Buffalo sauce. Add the breaded cauliflower florets and toss to coat them well with the sauce
