Ingredients

Bacon-wrapped scallop skewers

  • 160 ml (2/3 cup) mayonnaise
  • 10 ml (2 teaspoons) chopped garlic
  • 30 ml (2 tablespoons) chopped fresh parsley
  • 10 ml (2 tsp.) lemon zest
  • 10 ml (2 tsp.) fresh lemon juice
  • 7.5 ml (1/2 tbsp.) Herbamare Original organic herbal sea salt
  • 20 medium scallops (20/30 calibre)
  • 20 slices pre-cooked bacon
  • 1 lemon, cut into quarters

How to make Bacon-wrapped scallop skewers

1.  Preheat barbecue to medium-high (approx. 220°C - 425°F).

2.  In a bowl, combine mayonnaise, garlic, parsley and lemon zest and juice. Add a quarter of the sea salt and stir. Re-chill.

3.  Coat each scallop with a slice of bacon, then immediately skewer the scallops on four skewers.

4.  Season scallop skewers with remaining sea salt.

5.  On a hot, oiled barbecue grill, cook the scallop skewers for 1 to 2 minutes on each side.

6.  Serve skewers with lemon wedges and flavored mayonnaise.
