This salad recipe is fresh, but consistant and can easily be brought to a potluck lunch or dinner. You can swap some of the ingredients to make it vegan and/or gluten-free.
Cabbage is an excellent source of natural antioxidant, vitamin C. Provides 36.6 mg or about 61% of RDA per 100 g. Regular consumption of foods rich in vitamin C helps the body develop resistance against infectious agents and scavenge harmful, pro-inflammatory free radicals.
1. Cook Asian noodles as per package. Drain and rinse with cold water. Set aside.
2. Mix ingredients for dressing : vinegar, peanut butter, tamari sauce, brown sugar, sesame oil, honey, Herbamare, garlic, ginger, cayenne and red pepper flakes.
3. In a large bowl, toss noodles with carrots, cabbage, cucumber, green onions, mixed seeds and cilantro. Mix together with dressing and serve.
