Veggie Stew

Here's a veggie stew recipe, packed with vegetables, lentils and high in protein! Perfect as a dinner idea for the week!

Ingredients

Veggie Stew

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 6 garlic cloves, minced
  • ½ tsp Herbamare Original
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 4 cups potatoes, diced
  • 2 cups mushrooms, cut in half
  • ½ tsp sage
  • 1 tsp thyme
  • 1 tsp oregano
  • ¼ cup chopped fresh parsley
  • ¼ cup balsamic vinegar
  • 1 cup of red lentils
  • ¼ cup organic all purpose flour
  • 2 cubes Herbamare vegetable broth, dissolved in 4 cups of boiling water

Herbamare® Original

Herbamare® Original is made from sea salt and 12 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.

How to make Veggie Stew

1.In a large pot, over medium high heat, drizzle the oil and add the onion and garlic and stir, season with Herbamare Original herbed sea salt.

2.Add the other vegetables, the lentils, the fresh parsley, the balsamic vinegar, the flour and mix.

3.Add the vegetable broth. Mix and bring to a boil for 10 min while stirring occasionally.

4.Reduce heat to simmer 45 min and add lid but keep an opening. Stir 3-4 times until cooked.

5. Enjoy as is or served a side of bread.
