This quinoa salad is the perfect addition to any fish dish. Tasty and gluten-free, quinoa is an attractive alternative to wheat products for people with celiac disease.
Herbamare® is made from sea salt and 12 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.
1. Using a colander, rinse the quinoa under cold water. Combine quinoa, water and Herbamare® Original in a medium saucepan and bring to a boil.
2. Boil for 5 minutes. Reduce heat and simmer for about 15 minutes, or until water is completely absorbed. Remove from heat and mix with fork. Let the quinoa cool to room temperature.
3.In a Mason jar, layer the quinoa, mango, tomatoes, green onions, coriander and avocados.
4. In a small bowl, whisk together lime juice, olive oil, cumin, Herbamare® Original and pepper. Pour the vinaigrette over the quinoa salad. Serve at room temperature or refrigerated.
