The marriage of quinoa, strawberries and apples is divine. These healthy, nutritious muffins are perfect for breakfast or to fill the afternoon cravings!
Strawberries are high in vitamin C which is great for boosting the immune system and strengthening eye health. The dietary fibre also helps to regulate bowel movements.
1. Preheat the oven to 350ºF (180ºC).
2. Bring water to a boil, add quinoa, reduce heat to low and simmer for 12-15 minutes.
3. During that time, cut the fruits and add them to the dry ingredients: flour, sugar, baking powder and cinnamon.
4. Add 500 ml (2 c.) of cooked quinoa.
5. In another bowl, combine the milk, egg and vanilla. Combine all the ingredients.
