The combination of eggs, onions, potatoes and cheese is simply perfect! This frittata can be served as a brunch or evening meal, accompanied by a salad.
A medium baked potato contains about 45% of the Recommended Daily Intake of Vitamin C. Vitamin C is important for your immune system, helping to fight infections such as the common cold. Potatoes used to be eaten on ships as a preventative against scurvy.
1. In a large non-stick skillet, heat 1/4 cup of oil over high heat. Add the potatoes and onion and coat well with the oil.
2. Season with Herbamare and pepper. Cover and cook gently for 10 to 15 minutes, stirring frequently, until the potatoes are tender. Let cool.
3. In a bowl, gently combine the egg and potato mixture. Season with Herbamare and pepper.
4. With the rack in the middle position, preheat the oven's broiler.
5. In the same skillet, cleaned, heat the remaining oil over medium heat. Pour the egg and potato mixture and cook gently for about 5 minutes.
6. Add cheese and finish cooking in the oven for about 5 minutes.
7. Adjust seasoning if necessary and serve.
