Turning a classic recipe into a more healthy and tasty (in my opinion) version! This lactose-free Eggs Benedict recipe is an easy and healthy brunch idea. Get creative and add sesame seeds or green onions on top.
Herbamare® Original is made from sea salt and 15 different fresh organically grown vegetables, garden herbs and iodine rich kelp. It is a delicious accompaniment to any meal.
1. Pour some hot water in a blender and let sit while you cook the eggs.
2. Bring a medium sized pot with water to a boil. Set aside a plate with paper towel. Add vinegar to the boiling water and stir to make a whirlpool. Lower heat to a simmer. Gently drop in all 4 eggs - one at a time. Let cook for 3 minutes. Remove eggs with a slotted spoon and place on plate with paper towel.
3. Pour out water from blender and add egg yolks, lemon juice, tahini, Herbamare and paprika, and blend.
4. Slowly add the melted ghee to the blender on low until it starts to thicken and is well incorporated with the rest. Slowly add warm water and Herbamare if consistency is too thick and if you want it more salty.
5. Mount toasts with smoked salmon, eggs and pour hollandaise sauce on top.
6. Enjoy!
