This recipe uses Beet juice to add some nutrition and natural colouring to these cookies.
Due to its high fibre content, beetroot is great for supporting the digestive system. It helps to prevent constipation and keep bowels healthy and regular. Beetroot is good for those with fatigue.
1. Preheat your oven to 375 °F. Grease a baking sheet with coconut oil.
2. Mix flour, baking soda, cacao and salt in a large mixing bowl and set aside.
3. Using a hand mixer, mix butter, egg, raw sugar, beet juice and vanilla in a medium bowl.
4. Fold dry & wet ingredients together in large bowl and add chocolate chips.
5. Pace in fridge for 15 minutes.
6. Roll into tbsp sized bites and place at least 1 inch apart on baking sheet.
7. Bake for 10-15 minutes (10 for softer cookies and 15 if you want them cooked more).
8. Let cool and enjoy!
