Chicken and Olives Casserole

This baked chicken with green olives is a healthy recipe to make over and over again. The carrots, mushrooms and onions give it a boost of nutrition and flavor! Serve over brown rice or by itself.

Ingredients

Chicken and Olives Casserole

  • 8-10 boneless chicken thighs
  • 1 large onion, chopped
  • 3-4 carrots, sliced
  • 1 cup of green olives stuffed with pimento paste (stuffed manzanilla olives)
  • 227 g of white mushrooms
  • ¼ cup of water
  • 2 tbs of unbleached white flour
  • 1 tsp dried tarragon
  • 1 teaspoon of Herbamare® Original

Mushrooms are rich in vitamin D – the sunshine vitamin. Low vitamin D can cause many health issues including lack of energy, low mood, mood swings, low immunity, sleep problems, as well as bone weakness and muscle pain – all symptoms often experienced during the menopause.

How to make Chicken and Olives Casserole

1. Preheat the oven to 350˚F.

2. In a rectangular baking dish, place the chicken thighs and add onion, carrots, olives and mushrooms.

3. Mix water and flour to a homogeneous consistency and pour over the chicken and vegetables.

4. Add tarragon and Herbamare.

5. Cover and bake for 1:30 h.

6. Adjust seasoning if necessary and serve.
