For a little treat with your afternoon tea, this lovely gently spiced tea bread is perfect. The banana provides extra natural sweetness and it tastes lovely hot or cold.
Bananas are great for your digestive system! They help aid digestion, stimulate the growth of friendly bacteria and because they are high in fibre they help keep your bowels healthy.
1. Grease a 1kg loaf tin. Melt the spread in a small saucepan over a low heat. Stir the flours, baking powder and cinnamon into a large bowl. Stir in the sugar, mashed bananas, melted spread, raisins and eggs and beat for 3 minutes until smooth.
2. Turn the mixture into the prepared tin and bake in a preheated oven, 180C (350F), Gas Mark 4 for 50 minutes - 1 hour until a skewer pierced through the centre comes out clean. Stand the tin on a wire rack to cool slightly before turning out.
3. The tea bread is much tastier if left to mellow for 2-3 days wrapped closely in foil. It can be served thinly sliced and spread with low fat soft cheese or made into sandwiches with thinly sliced apple or mashed banana.
