This breakfast cookie recipe is all of the good things you love about a cookie - crunchy, sweet, chewy and tasty, but it's nutritious and perfect to kickstart your day! You can enjoy one with a banana or yogurt and it's delicious!
Oats are rich in a specific type of fiber called beta-glucan. This particular type of fiber is known to help lower levels of bad cholesterol.
1. Pre-heat oven to 350°F and line a large baking sheet with parchment paper
2. Add all dry ingredients to a large bowl and mix.
3. Add all remaining ingredients and mix well.
4. Use the lid of a mason jar to mold the perfect cookies and place onto the baking sheet spaced out evenly. You can also use a 1/4 cup to scoop the right amount, but the mason jar lid makes the perfect shape and size.
5. Cook for 15 minutes or until firm and cooked through.
6. Let cool on wire rack before eating.
